Recipe - Rhubarb Schnapps

A good way to preserve a glut of rhubarb. Make it now and enjoy in the summer.

Ingredients:

Pink Rhubarb – a few stalks
Sugar (220g)
Vodka (750ml)
One or two of the following additional flavours (or your own choice):
Orange zest, Lemon zest, Ginger stem or root ginger - chopped into small pieces, Cloves, Cinnamon, Vanilla sticks, Star Anise.

Method:

1. Wash and dry the rhubarb then chop into small chunks
2. Place in a bowl, cover with the sugar and leave for 2 days
3. After 2 days, mix the rhubarb/sugar with the vodka, add your flavourings and pour into a jar
4. Leave the jar somewhere cool and dark for a month, giving it a gentle shake occasionally
5. After a month, strain the contents through a piece of muslin and pour into sterilized bottles or jars
6. Add a label, remembering to note which flavourings you used
7. Leave to mature for several more months, then drink over ice
