Fried Courgette Flowers
A seasonal treat. Makes 12 fried courgette flowers.

Ingredients
- 12 courgette flowers
- 80g flour
- 150ml milk
- 1 egg
- Basil - quite a lot
- Salt & pepper
- Olive oil for frying
Method
- Mix the flour, milk, egg, basil, salt and pepper into a light batter.
- Heat the olive oil in a frying pan.
- Dip the flowers in the batter and fry, after 2 to 3 minutes turn the flowers over.
- Serve.
Very nice with an aperitif!
