Fried Courgette Flowers

A seasonal treat. Makes 12 fried courgette flowers.

Ingredients

  • 12 courgette flowers
  • 80g flour
  • 150ml milk
  • 1 egg
  • Basil - quite a lot
  • Salt & pepper
  • Olive oil for frying

Method

  • Mix the flour, milk, egg, basil, salt and pepper into a light batter.
  • Heat the olive oil in a frying pan.
  • Dip the flowers in the batter and fry, after 2 to 3 minutes turn the flowers over.
  • Serve.

Very nice with an aperitif!
