Potato & Courgette Fritters

Ingredients:
  • 2 medium sized potatoes
  • 2 medium sized courgettes
  • 2 lightly beaten eggs
  • Salt & pepper
  • Nutmeg to taste
  • Dab of Butter
  • Oil for frying

Method:
  • Grate spuds & courgettes coarsely then wring all the juices out - use a tea towel.
  • Put pulp in a bowl with rest of ingredients and mix.
  • Add oil to a frying pan and spoon pulp in & cook both sides on a medium heat till brown.

It will be necessary to repeat lots of times because they are so tasty! - yum yum.
