Courgette & Beetroot Burgers

A vegetarian recipe making the most of seasonal produce available. The beetroot adds great colour and the texture and taste make these the best burgers we've ever had.

Ingredients:
  • 1 or 2 courgettes (grated)
  • 1 raw beetroot (grated)
  • 1 large carrot (grated)
  • 1 red onion (finely chopped)
  • 400g tin chickpeas (drained)
  • 100g wholemeal bread (crusts removed)
  • 3 heaped tbsp crunchy peanut butter
  • 1 clove of garlic (crushed)
  • 1 egg yolk
  • Handful of chopped parsley
  • Olive oil for frying

Method:
  • Heat a little of the oil in a large frying pan. Sauté the onion and garlic for a few minutes then add the grated vegetables and stir until soft.
  • Put the bread, chickpeas, peanut butter and egg yolk in a food processor and combine. Transfer to a bowl, add the grated vegetables and parsley and mix well. Season generously.
  • Form the mixture into 8 burgers and chill for ½ an hour (or overnight).
  • Heat the rest of the oil in a non-stick frying pan and cook the burgers on each side until lightly browned.
