Berry Compote

Berry compote is an easy way to use up fruit from the last year's reserves in the freezer. It's easy to make and goes well with porridge for a warming treat at this time of year.

Ingredients:
  • 250g fruit such as blackberries or raspberries
  • 25g caster or muscovado sugar
  • 1 cinnamon stick (optional)

Method:
  • Heat the fruit in a pan, thawing if necessary.
  • Add some water depending on the consistency, about 2-3tbsp.
  • Add the sugar and cinnamon stick when it comes to the boil.
  • Cover and simmer for 10 minutes, stirring occasionally.

Spoon onto hot porridge, or leave to cool and use in desserts of your choice.

You can also make it with fresh fruit in the summer and serve with ice cream. Delicious!
