Growing Edible Flowers

Why not sow some edible flowers amongst your veg this year? There are a range of beauties to choose from and they double up as bee and beneficial insect attractors too.

The following are ones which I grow on my allotment. They have attractive petals which add colour and interest to salads: Marigolds; Calendula; Borage; Anchusa; Viola; Chives; Rocket and Nasturtium (the peppery-tasting Nasturtium leaves are also edible).

There are many more which you can try, but be aware that whilst there are many edible flowers there are also some which are poisonous, so do make sure you check before eating!

As well as decorating the salad bowl, edible flowers can be used to decorate cakes and in a multitude of desserts and drinks. Rose petals and Lavender have been used in baking for centuries. Yvonne made some fantastic cakes for Open Day last year using lavender-flavoured sugar.

Even if you don't set out to grow flowers, there are some on your vegetable crops which you can eat. Broad Bean and Courgette flowers are the most obvious. See Isabelle's recipe for fried courgette flowers here.
