Gone Foraging - Marsh Samphire

If you like Marsh Samphire you will know that the season for picking it is short - just July and August. It is a delicacy worth seeking out if you can find it!

Only a small quantity is needed as it is quite salty. It is also known as Sea Asparagus. It grows on mud in the estuary so be prepared to get your feet wet! Always cut with a knife or scissors. Don't pull it up or there will be none for next year.

It will grow back and sometimes you can pick twice if there is enough. It varies depending on the weather. Some years it is very good, other times we find hardly any. It needs to be eaten fresh so only pick enough for one or two meals. I cook it in just a little melted butter or add to a risotto.
