Experiments with... Oca

We have just dug up and used our oca for the first time, so seems a good time to write about them.

We planted two short rows in raised mounds in May, with each tuber about a foot apart and the rows about 2-3ft apart. The leaves showed quickly and are still green in December. Having read the advice to leave them for two weeks after they have died off and/or after the first frost, they have had an extended life!

The tubers are now abundant but still small. They also seem quite attractive to slugs (or whatever) which makes preparing them for cooking quite fiddly. So far they've been added to stews, and the flavour is not unpleasant, so we will persevere and reserve judgement!
