Goodwill Rainbow Pie

This is a fantastic vegetarian pie recipe from A Modern Way to Eat by Anna Jones. The colourful layers look really attractive and it tastes great too.

We've cooked this a few times and love it because it's really quite easy to make and all the ingredients are in season and on our allotment. For the two of us we scale the recipe down by half or we'd be eating it for a week - although it's so delicious you might want to anyway.

Don't be put off by the length of the recipe: read through it and you will see that in fact it's all very straightforward and easy to make (especially if you use bought pastry). It's also suitable for vegans with a few tweaks and makes a great alternative to Nut Roast for Christmas dinner.
