Summer Salad

With the weather so warm we've been eating some lovely salads. Here's one I made from leaves and flowers from our allotment (click on pic to enlarge). The base is lettuce leaves, with pea shoots, spring onion, nasturtium leaves and flowers, decorated with viola and borage flowers and calendula petals. It looks almost too beautiful to eat - but it was yummy, especially with a chilled glass of white wine!

As well as eating them, this is also the optimum time to sow salads for over-wintering, either in a greenhouse or under cloches on the allotment. They need to have reached a healthy size while the weather is warm to enable them to withstand and produce throughout the winter months.
